It is also known as Khajuria, Khabauni or Thikari, and it is a dry sweet. It is one of the most popular sweet dish commonly used in Mithila region of North Bihar. To further enhance the Thekua’s we came up with the idea of making Thekua’s from Millets. Thus we made this Bajra Thekua.
Thekua Made in Bajra Flour or Pearl Millet
The Bajra Thekua, or Bajre ka thekua are being made with the Bajra, Gud or Jaggery, a bit of Sugar, and Dry fruits. Here are the ingredients used for making it:
Bajra Flour
Jaggery or Gud, along with a bit of Sugar (remember we cannot make the Thekua with only Gud or Jaggery, reason being it makes the dough soft and when we fry it, it spreads out badly, so we use a bit of Sugar to give it a better taste and perfect look)
Ghee/Refined Oil
Dry Fruits like cashew, almonds, etc.
Cardamom for flavor
